I have a Red Lotus and i just trim any leaves that try to reach the surface. I read somewhere that if you do that for a while that it will train them.

That did seem to work for me as well. I trimmed all the leaves at once and after that it seemed to grow smaller, shorter leaves. I'm guessing that this would be temporary.

Also i read that if you ever let the leaves reach the surface it will send up leaves higher more because it knows where the surface is.

Yes, if you trimm it's only temporary. But it still good enough.

It doesn't sound like you need any more light with the growth your getting in 3 days. Kelvin ratings don't quite matter in this case. Kelvin effects how the tank will look to your eyes than anything else.

I had Nimphaea Lotus (green variety) with the same rapid growth problem. As mention previously, trimming the leaves constant will help train the plant to stay shorter. It's not going to solve the growth problem and keep it slow growing and low, but it will help you maintain the look for a short period. Nimphaea Lotus, or most lotuses in general are plants that needs constant attention to keep them looking the way you want it in an aquascape.
